  • Onion: 1 large yellow onion, sliced into strips, adding a savory base and aromatic depth to the fajitas.
  • Olive Oil: 2 tablespoons, extra virgin olive oil, essential for sautéing the vegetables and chicken, and adding healthy fats.
  • Fajita Seasoning: 2 tablespoons, pre-made fajita seasoning blend (or homemade – see tips below), packed with spices to create that authentic fajita flavor.
  • Lime Juice: 2 tablespoons, freshly squeezed lime juice, brightens the flavors and adds a zesty tang that cuts through the richness.
  • Tortillas: 8-10 flour or corn tortillas (your preference), the perfect vessels for wrapping up all the delicious fajita fillings.
  • Optional Toppings: Consider sour cream, salsa, guacamole, shredded cheese, cilantro, jalapeños – for customizing your fajitas and adding extra layers of flavor.

Instructions

  1. Prepare the Chicken and Vegetables: Begin by slicing the chicken breasts thinly against the grain. This is crucial for quick and even cooking, ensuring tender fajita chicken in minutes. Next, slice the bell peppers and onion into strips of roughly the same size as the chicken. Uniform sizes will help everything cook at the same rate.
  2. Heat the Skillet: Place a large skillet, preferably cast iron for excellent heat retention and that signature fajita sizzle, over medium-high heat. Allow the skillet to get nice and hot before adding the oil. This ensures the chicken and vegetables sear properly rather than steaming.
  3. Sauté the Vegetables: Once the skillet is hot, add the olive oil. Let the oil heat up for a few seconds, then add the sliced onions and bell peppers. Sauté the vegetables for about 5-7 minutes, stirring occasionally, until they are tender-crisp. You want them to soften slightly but still retain some bite and vibrant color. Don’t overcook them at this stage; they will continue to cook with the chicken.
  4. Add the Chicken and Seasoning: Push the sautéed vegetables to one side of the skillet to create space. Add the sliced chicken to the other side of the hot skillet. Immediately sprinkle the fajita seasoning evenly over the chicken and vegetables. This allows the spices to bloom in the heat and coat everything thoroughly.
  5. Cook the Chicken: Cook the chicken for approximately 5-7 minutes, stirring frequently, until it is cooked through and no longer pink. Ensure to break up any clumps of chicken as it cooks so it cooks evenly. The chicken should develop a nice slightly browned and flavorful exterior thanks to the fajita seasoning and hot skillet.
  6. Combine and Finish: Once the chicken is cooked, stir it together with the sautéed vegetables, ensuring everything is well combined and coated in the fajita seasoning. Cook for another minute or two, allowing the flavors to meld together beautifully.
  7. Add Lime Juice: Remove the skillet from the heat and squeeze the fresh lime juice over the fajita mixture. The lime juice adds a crucial element of brightness and acidity, balancing the richness of the spices and other ingredients. Toss everything together to distribute the lime juice evenly.
  8. Warm the Tortillas: While the fajita mixture rests briefly, warm your tortillas. You can do this in several ways:
