Fast Choco Peanut Clusters

  • Author: Bianca

Ingredients

  • Chocolate Chips (2 cups): The foundation of our clusters, providing that decadent chocolatey richness. Use semi-sweet, milk chocolate, or even dark chocolate depending on your preference.
  • Peanut Butter (1 cup): Creamy peanut butter binds the clusters together and adds that signature nutty flavor that complements the chocolate perfectly. Opt for smooth or crunchy based on your texture preference.
  • Roasted Peanuts (1 cup): Unsalted roasted peanuts provide a satisfying crunch and enhance the peanut flavor. Ensure they are roasted for optimal taste and texture.
  • Rice Krispies Cereal (2 cups): Adds a light and airy crispness to the clusters, preventing them from being too dense and providing a delightful textural element.
  • Sea Salt Flakes (Pinch, optional): A sprinkle of sea salt flakes elevates the flavor profile, enhancing the sweetness of the chocolate and the saltiness of the peanuts, creating a balanced and irresistible taste.

Instructions

  1. Prepare Your Workspace: Line a baking sheet with parchment paper or wax paper. This will prevent the clusters from sticking and make cleanup a breeze. Set aside.
  2. Melt the Chocolate and Peanut Butter: In a microwave-safe bowl, combine the chocolate chips and peanut butter. Microwave in 30-second intervals, stirring after each interval, until the chocolate is completely melted and smooth. Be careful not to overheat the chocolate, as it can burn. Alternatively, you can melt the chocolate and peanut butter in a double boiler over simmering water, stirring constantly until smooth.
  3. Combine Ingredients: Once the chocolate mixture is melted and smooth, add the roasted peanuts and Rice Krispies cereal to the bowl.
  4. Mix Thoroughly: Gently stir all the ingredients together until the peanuts and cereal are evenly coated in the chocolate-peanut butter mixture. Ensure everything is well combined for consistent flavor in each cluster.
  5. Form the Clusters: Using a spoon or a small cookie scoop, drop spoonfuls of the mixture onto the prepared baking sheet. You can make them any size you like, from bite-sized to larger clusters. For uniform clusters, use a cookie scoop.
  6. Sprinkle with Sea Salt (Optional): If desired, lightly sprinkle a pinch of sea salt flakes over the top of each cluster while the chocolate is still slightly melted. This will add a lovely salty-sweet contrast.
  7. Chill to Set: Place the baking sheet in the refrigerator and chill for at least 20-30 minutes, or until the chocolate clusters are firm and set. This chilling process is crucial for the clusters to hold their shape and become easily manageable.
  8. Serve and Enjoy: Once the clusters are firm, remove them from the baking sheet and they are ready to serve! Store any leftover clusters in an airtight container in the refrigerator to maintain their crispness.
