Ingredients
Scale
Here’s what you’ll need to create this single-serving wonder. The ingredients are divided into two parts: the cake batter itself and the glorious frosting that truly makes it feel like a cinnamon roll.
For the Mug Cake:
- 4 tablespoons All-Purpose Flour: This forms the structural base of our cake, giving it substance and texture.
- 2 ½ tablespoons Granulated Sugar: Provides sweetness to the cake batter. You can adjust slightly based on your preference.
- ¼ teaspoon Baking Powder: The leavening agent responsible for making the mug cake light and fluffy. Ensure it’s fresh for the best rise.
- Pinch of Salt: Enhances the other flavours and balances the sweetness. Just a tiny amount is needed.
- 3 tablespoons Milk: Adds moisture to the batter. Whole milk provides richness, but low-fat, skim, or plant-based milk (like almond or soy) work too.
- 1 tablespoon Melted Butter (Unsalted): Adds richness, flavour, and tenderness to the cake. You can substitute with melted coconut oil or a neutral vegetable oil if preferred.
- ¼ teaspoon Vanilla Extract: Provides a warm, aromatic background flavour that complements the cinnamon.
For the Cinnamon Swirl:
- 1 tablespoon Brown Sugar (Packed): Offers a deeper, molasses-like sweetness compared to granulated sugar, characteristic of cinnamon roll filling. Light or dark brown sugar works.
- ½ teaspoon Ground Cinnamon: The star spice! Provides that iconic warm, aromatic flavour. Adjust the amount based on how cinnamon-forward you like it.
- ½ tablespoon Melted Butter (Unsalted): Helps bind the cinnamon and sugar together and adds moisture to the swirl.
For the Cream Cheese Frosting:
- 1 ounce Cream Cheese (Softened): The base of our tangy frosting. Make sure it’s properly softened for smooth mixing (leave it at room temperature for about 15–20 minutes).
- 2 tablespoons Powdered Sugar (Confectioners’ Sugar): Sweetens the frosting and gives it a smooth consistency. Sift if lumpy.
- ½ teaspoon Milk (or Cream): Thins the frosting to a drizzly consistency. Add a tiny bit more if needed to reach desired texture.
- Splash of Vanilla Extract (Optional): Adds an extra layer of flavour to the frosting.
Instructions
Follow these simple steps to microwave cinnamon roll perfection in just a few minutes. Remember to work quickly once the batter is mixed for the best texture.
- Choose Your Mug: Select a standard-sized microwave-safe mug (approximately 12-16 ounces is ideal). A larger mug helps prevent overflow. Ensure it has no metallic trim.
- Mix Dry Ingredients: In the mug, combine the all-purpose flour, granulated sugar, baking powder, and salt. Whisk them together thoroughly with a fork or small whisk. This ensures the baking powder is evenly distributed, leading to a consistent rise. Break up any clumps of flour.
- Add Wet Ingredients: Pour the milk, 1 tablespoon of melted butter, and ¼ teaspoon of vanilla extract directly into the mug with the dry ingredients.
- Combine Batter: Stir everything together until just combined. Be careful not to overmix; a few small lumps are perfectly fine. Overmixing can lead to a tough or rubbery cake. Scrape the sides and bottom of the mug to ensure all the flour is incorporated.
- Prepare the Cinnamon Swirl: In a separate small bowl, combine the packed brown sugar, ground cinnamon, and ½ tablespoon of melted butter. Stir until it forms a crumbly or pasty mixture.
- Create the Swirl: Drop spoonfuls of the cinnamon mixture onto the surface of the batter in the mug. Use a toothpick or the handle of the fork to gently swirl the cinnamon mixture into the batter. Don’t fully mix it in; you want distinct ribbons of cinnamon running through the cake. Aim for 3-4 gentle swirls.
- Microwave: Place the mug in the center of your microwave. Cook on high power. Microwave times vary significantly depending on the wattage of your microwave. Start with 60 seconds. Check for doneness – the cake should look set on top and spring back slightly when gently touched. If it’s still wet in the center, continue microwaving in 10-15 second bursts until cooked through. Typical cooking times range from 60 to 90 seconds. Be cautious not to overcook, as this will make the cake dry and tough.
- Cool Slightly: Carefully remove the mug from the microwave – it will be very hot! Let the mug cake cool for a minute or two while you prepare the frosting. This allows the cake to finish setting up and prevents the frosting from melting completely off.
- Make the Frosting: While the cake cools, prepare the quick cream cheese frosting. In a small bowl, combine the softened cream cheese, powdered sugar, ½ teaspoon of milk (or cream), and the optional splash of vanilla extract.
- Mix Frosting: Stir vigorously with a fork or small whisk until the frosting is smooth and creamy. If it’s too thick, add a tiny drop more milk. If it’s too thin, add a touch more powdered sugar.
- Frost and Serve: Spoon or drizzle the cream cheese frosting over the warm mug cake. Serve immediately and enjoy your quick cinnamon roll treat!
