Step 1: Prepare the Chimichurri

- Mix Ingredients: In a medium bowl, combine the chopped parsley, oregano, and minced garlic.
- Add Liquid Components: Stir in the olive oil and red wine vinegar, mixing well until the ingredients are thoroughly combined.
- Season: Add red pepper flakes, salt, and pepper to taste. Adjust the seasoning based on your preference for heat and saltiness.
- Rest: Allow the chimichurri to sit for at least 30 minutes to let the flavors meld. For best results, prepare it a day in advance and store it in the refrigerator.
Step 2: Grill the Chorizo
- Preheat the Grill: Heat your grill to medium-high heat. You want it hot enough to sear the sausages but not so hot that they burn.
- Oil the Grill: Lightly oil the grill grates to prevent sticking. You can use a paper towel dipped in olive oil for this.
- Grill the Sausages: Place the chorizo sausages on the grill. Cook for about 10-12 minutes, turning occasionally until they are evenly browned and cooked through.
- Rest the Sausages: Remove the chorizo from the grill and let them rest for a few minutes. This helps the juices redistribute and keeps the sausages juicy.
Step 3: Assemble the Choripán
- Prepare the Bread: Slice the bread rolls in half and lightly toast them on the grill until they are crispy and golden.
- Slice the Chorizo: Once rested, slice the chorizo sausages in half lengthwise for easy layering in the sandwich.
- Assemble: Place the chorizo inside the toasted bread rolls.
- Add Chimichurri: Generously spoon chimichurri sauce over the chorizo, ensuring each bite will be flavorful.
