Step 1: Prepare the Chimichurri

  2. Mix Ingredients: In a medium bowl, combine the chopped parsley, oregano, and minced garlic.
  3. Add Liquid Components: Stir in the olive oil and red wine vinegar, mixing well until the ingredients are thoroughly combined.
  4. Season: Add red pepper flakes, salt, and pepper to taste. Adjust the seasoning based on your preference for heat and saltiness.
  5. Rest: Allow the chimichurri to sit for at least 30 minutes to let the flavors meld. For best results, prepare it a day in advance and store it in the refrigerator.

Step 2: Grill the Chorizo

  1. Preheat the Grill: Heat your grill to medium-high heat. You want it hot enough to sear the sausages but not so hot that they burn.
  2. Oil the Grill: Lightly oil the grill grates to prevent sticking. You can use a paper towel dipped in olive oil for this.
  3. Grill the Sausages: Place the chorizo sausages on the grill. Cook for about 10-12 minutes, turning occasionally until they are evenly browned and cooked through.
