Instructions

  1. Preheat Oven & Prepare Pan: Preheat your oven to 400°F (200°C). Line a large baking sheet (or two smaller ones) with parchment paper for easy cleanup and to prevent sticking. This is crucial for getting good caramelization without the bites adhering firmly to the pan.
  2. Prepare Sweet Potatoes: Wash the sweet potatoes thoroughly under cold running water, scrubbing away any dirt. There’s no need to peel them – the skin contains fiber and nutrients, and it gets pleasantly tender when roasted. Pat the potatoes completely dry with a clean kitchen towel or paper towels. Moisture is the enemy of crispiness, so ensure they are dry.
  3. Slice the Sweet Potatoes: Trim off the pointed ends of the sweet potatoes. Using a sharp knife or a mandoline slicer (for ultimate consistency), slice the sweet potatoes into uniform rounds, about 1/4-inch to 1/3-inch (approx. 0.6 – 0.8 cm) thick. Uniform thickness is key to ensuring they all cook evenly. If some slices are much thicker than others, the thinner ones might burn before the thicker ones are tender.
  4. Season the Sweet Potatoes: Place the sweet potato rounds in a large mixing bowl. Drizzle the olive oil over the slices. Sprinkle the garlic powder, smoked paprika, dried rosemary, sea salt, and black pepper evenly over the potatoes.
  5. Toss to Coat: Using your clean hands or a large spoon/spatula, gently toss the sweet potato slices until they are all evenly coated with the oil and seasonings. Make sure every slice gets some love – this ensures consistent flavor throughout the batch.
  6. Arrange on Baking Sheet: Spread the seasoned sweet potato rounds in a single layer on the prepared baking sheet(s). Avoid overcrowding the pan.
