- Season the Beef: Generously season the beef chuck roast with salt and pepper on all sides. Let it sit at room temperature for about 15 minutes.
- Prepare the Vegetables: While the beef is resting, peel and cut your carrots and potatoes. Chop the onions into wedges and mince the garlic.
Step 2: Sear the Beef
- Heat the Oil: In a large skillet or Dutch oven, heat the olive oil over medium-high heat.
