  • Author: Sarah

Ingredients

Scale

To make the Sunrise Egg Wrap, you’ll need the following ingredients:

  • 4 large eggs: Rich in protein and essential vitamins.
  • 2 tablespoons of milk: To make the eggs fluffy and creamy.
  • 1 tablespoon of olive oil: For cooking the eggs.
  • 1 cup of fresh spinach: Provides iron and other essential nutrients.
  • 1 ripe avocado: Supplies healthy fats and fiber.
  • 2 whole wheat tortillas: A healthier alternative to refined flour tortillas.
  • Salt and pepper to taste: For seasoning the eggs.
  • Optional toppings: Salsa, shredded cheese, or hot sauce.

Instructions

Preparing the Sunrise Egg Wrap is simple and takes just a few minutes. Follow these steps:

  1. Prepare the Eggs
    • Crack the eggs into a bowl, add the milk, and whisk until well combined. Add a pinch of salt and pepper to taste.
  2. Prepare the Spinach
    • Rinse the spinach thoroughly under cold water and pat dry with a paper towel.
  3. Cook the Eggs
    • Heat the olive oil in a non-stick skillet over medium heat. Pour in the egg mixture and let it sit for a few seconds.
    • Gently stir the eggs with a spatula, allowing them to cook slowly until they are just set but still slightly runny. Remove from heat.
  4. Assemble the Wrap
    • Lay the whole wheat tortillas flat on a clean surface. Divide the scrambled eggs evenly between the two tortillas.
    • Add the fresh spinach on top of the eggs.
  5. Add the Avocado
    • Slice the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork and add a pinch of salt.
    • Spread the mashed avocado over the spinach.
  6. Roll the Wrap
    • Carefully roll each tortilla into a wrap, tucking in the sides as you go.
  7. Serve and Enjoy
    • Cut each wrap in half and serve immediately, with optional toppings like salsa or shredded cheese for added flavor.
