Making Sweet Chili Chicken Meatballs
- Preheat oven to 400°F (200°C) and prepare a baking sheet.
- In a bowl, combine ground chicken, breadcrumbs, egg, garlic, green onions, soy sauce, salt, and pepper.
- Scoop about 1.5 tbsp of the mixture and roll into 1-inch balls, placing them on the prepared sheet.
- Bake for 15–18 minutes, flipping halfway until golden and internal temp reaches 165°F.
- In a saucepan, combine sweet chili sauce, honey, rice vinegar, soy sauce, and garlic powder; simmer for 3 minutes.
- Whisk cornstarch with water and stir into the sauce until glossy.
- Transfer meatballs to a bowl, pour sauce over, and toss gently to coat.
- Serve garnished with green onions and sesame seeds, paired with rice or lettuce cups.
