  • 1 pound Ground chicken Choose lean yet juicy chicken for tender meatballs.
  • 1/2 cup Breadcrumbs Use plain or seasoned.
  • 1 large Egg Acts as glue.
  • 2 cloves Garlic Freshly minced.
  • 2 tablespoons Green onions Chopped.
  • 2 tablespoons Soy sauce
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
For the Sweet Chili Sauce
  • 1/2 cup Sweet chili sauce Opt for favorite brand or homemade.
  • 2 tablespoons Honey
  • 1 tablespoon Rice vinegar
  • 1 tablespoon Soy sauce
  • 1 teaspoon Garlic powder
  • 1 tablespoon Cornstarch Mixed with water.

Method
 

Making Sweet Chili Chicken Meatballs
  1. Preheat oven to 400°F (200°C) and prepare a baking sheet.
  2. In a bowl, combine ground chicken, breadcrumbs, egg, garlic, green onions, soy sauce, salt, and pepper.
  3. Scoop about 1.5 tbsp of the mixture and roll into 1-inch balls, placing them on the prepared sheet.
  4. Bake for 15–18 minutes, flipping halfway until golden and internal temp reaches 165°F.
  5. In a saucepan, combine sweet chili sauce, honey, rice vinegar, soy sauce, and garlic powder; simmer for 3 minutes.
  6. Whisk cornstarch with water and stir into the sauce until glossy.
  7. Transfer meatballs to a bowl, pour sauce over, and toss gently to coat.
  8. Serve garnished with green onions and sesame seeds, paired with rice or lettuce cups.
