  • 1 cup Rolled Oats: (90g) – These act as the binding agent, adding a subtle chewiness and a boost of fiber to our treats. Use quick-cooking oats for a smoother texture or rolled oats for a slightly heartier bite.
  • ½ cup Honey or Maple Syrup: (170g) – Our natural sweetener, adding a touch of sweetness and helping to bind the ingredients together. Honey offers a floral note, while maple syrup brings a richer, caramel-like flavor.
  • ½ cup Chocolate Chips: (85g) – The star of the show, delivering that irresistible chocolatey goodness. Use semi-sweet, dark, or milk chocolate chips depending on your preference for sweetness and intensity.
  • 1 teaspoon Vanilla Extract: (5ml) – Enhances the overall flavor profile, adding a warm and comforting note that complements both chocolate and peanut butter. Pure vanilla extract is recommended for the best taste.
  • Pinch of Sea Salt: (Optional) – Just a tiny pinch to balance the sweetness and enhance the flavors of the peanut butter and chocolate. Flaky sea salt is ideal for a gourmet touch, but regular table salt works too.

Instructions

  1. Combine Peanut Butter and Sweetener: In a medium-sized mixing bowl, add the creamy peanut butter and honey (or maple syrup). If your peanut butter is very thick, you might want to microwave it for about 10-15 seconds to soften it slightly, making it easier to mix. However, be careful not to overheat it.
  2. Mix Until Smooth: Using a spatula or spoon, thoroughly mix the peanut butter and sweetener until they are well combined and the mixture is smooth and creamy. This step is crucial for ensuring the bites have a consistent texture.
  3. Add Vanilla Extract and Salt (Optional): Stir in the vanilla extract and the pinch of sea salt (if using). These additions enhance the overall flavor and add depth to the bites. Mix well to distribute evenly.
  4. Incorporate Rolled Oats: Gradually add the rolled oats to the peanut butter mixture. Start by adding half of the oats and mix thoroughly. Then, add the remaining oats and continue mixing until all the oats are fully incorporated and evenly distributed throughout the mixture. The mixture should become thicker and slightly sticky.
  5. Fold in Chocolate Chips: Gently fold in the chocolate chips. Distribute them evenly throughout the oat mixture. Be careful not to overmix at this stage, as you want the chocolate chips to remain intact and not melt into the mixture.
  6. Shape into Bites: Take a tablespoon of the mixture and roll it between your palms to form a small bite-sized ball. You can make them slightly larger or smaller depending on your preference. If the mixture is too sticky to handle easily, you can lightly dampen your hands with water or chill the mixture in the refrigerator for about 10-15 minutes to firm it up.
  7. Set and Chill (Optional): Place the formed bites on a parchment-lined plate or baking sheet. For a firmer texture, you can chill them in the refrigerator for about 15-20 minutes. This step is optional but recommended, especially if you live in a warmer climate or prefer a more solid bite.
