  • Ripe Avocados: (3 large, or about 4 medium) – The heart of our mousse, providing the creamy texture and healthy fats. Ensure they are perfectly ripe for the best flavor and consistency.
  • Sweetener of Choice: (1/2 cup maple syrup, honey, agave, or powdered sugar) – Adds sweetness to balance the avocado’s mild flavor. Adjust the amount to your preference. For a vegan option, maple syrup or agave are excellent choices.
  • Lime or Lemon Juice: (1/4 cup freshly squeezed) – Brightens the flavor, adds a tangy note, and prevents the avocado from browning, keeping the mousse vibrant green. Freshly squeezed juice is highly recommended for the best taste.
  • Plant-Based Milk or Cream: (1/2 cup coconut milk, almond milk, oat milk, or heavy cream for non-vegan) – Adds extra creaminess and helps to achieve the perfect mousse consistency. Coconut milk (full-fat, refrigerated and scooped from the top of the can) will provide the richest, most decadent texture, while other plant-based milks offer a lighter option. Heavy cream can be used for a richer, non-vegan version.
  • Vanilla Extract: (1 teaspoon pure vanilla extract) – Enhances the sweetness and adds a warm, comforting flavor note to the mousse.
  • Pinch of Salt: (A small pinch of fine sea salt) – Balances the sweetness and enhances all the other flavors in the mousse.

Instructions

  1. Prepare the Avocados: Begin by halving the ripe avocados. Remove the pits and scoop out the flesh into a blender or food processor. Ensure you are using perfectly ripe avocados for a smooth and creamy texture. Overripe avocados might have a slightly off flavor, while underripe ones will be difficult to blend smoothly.
  2. Add Sweetener and Citrus Juice: Pour your chosen sweetener (maple syrup, honey, agave, or powdered sugar) and freshly squeezed lime or lemon juice into the blender or food processor with the avocado. The citrus juice is crucial for both flavor and color preservation, preventing the avocado from oxidizing and turning brown.
  3. Blend Until Smooth: Blend the avocado, sweetener, and citrus juice until you achieve a completely smooth and creamy consistency. Stop blending occasionally to scrape down the sides of the blender or food processor to ensure everything is evenly incorporated. This step is vital for achieving the signature mousse-like texture.
  4. Incorporate Plant-Based Milk/Cream and Vanilla: Add your plant-based milk or cream (coconut milk, almond milk, oat milk, or heavy cream) and vanilla extract to the blender or food processor. If using full-fat coconut milk, chill the can in the refrigerator overnight and scoop out the thick cream from the top, leaving the watery liquid behind for other uses. This will result in an incredibly rich and decadent mousse.
  5. Blend Again for Creaminess: Blend all the ingredients together again until the mousse is perfectly smooth, light, and airy. Continue blending for a minute or two to ensure maximum creaminess and to incorporate air into the mixture, which will give it a lighter texture.
  6. Taste and Adjust: Taste the mousse and adjust the sweetness or tartness to your liking. If you prefer a sweeter mousse, add a little more sweetener. If you want a tangier flavor, add a squeeze more lime or lemon juice. A pinch of salt can also be added at this stage to further balance the flavors.
  7. Chill for at Least 2 Hours: Pour the avocado mousse into individual serving dishes or a larger bowl. Cover them with plastic wrap, pressing it directly onto the surface of the mousse to prevent a skin from forming. Refrigerate for at least 2 hours, or preferably longer, to allow the mousse to chill completely and set to a firmer, more delightful texture. Chilling also enhances the flavors, making the mousse even more delicious.
  8. Serve and Garnish: Once chilled, the avocado mousse is ready to serve. Garnish as desired. Consider options like fresh berries, chocolate shavings, chopped nuts, a sprinkle of cocoa powder, or a drizzle of extra sweetener.
