Follow these simple steps to whip up your delicious Creamy Carrot Dip:

  1. Cook the Carrots:
    • Place the peeled and roughly chopped carrots in a medium saucepan. Add enough water to cover the carrots.
    • Bring the water to a boil over high heat. Once boiling, reduce the heat to medium-low, cover the saucepan, and let the carrots simmer for about 15-20 minutes, or until they are very tender and can be easily pierced with a fork. The softer the carrots, the smoother your dip will be.
    • Once cooked, drain the carrots thoroughly. It’s important to remove as much water as possible to prevent a watery dip. You can let them sit in the colander for a few minutes to steam dry.
  2. Combine Ingredients in Food Processor:
    • Transfer the well-drained, cooked carrots to the bowl of a food processor.
