Easter Cranberry Brie Bites

  • Author: Sarah

Ingredients

Here’s what you’ll need to create these delightful Easter appetizers. Each ingredient plays a crucial role in achieving the perfect balance of flavors and textures:

  • Puff Pastry: (1 sheet, about 14 ounces) – Provides the flaky, buttery base for our bites. Make sure to thaw it properly according to package directions for easy handling and optimal puff.
  • Brie Cheese: (8 ounces, wheel or wedge) – The star of the show! Choose a good quality brie for the best flavor. You’ll need to cut it into small cubes to fit into the puff pastry.
  • Cranberry Sauce: (1/2 cup, canned or homemade) – Offers a sweet and tart counterpoint to the richness of the brie. Canned cranberry sauce works perfectly for convenience, but homemade adds an extra touch of freshness. Whole berry or jellied, both work well.
  • Egg: (1 large) – Used to create an egg wash, giving the puff pastry a beautiful golden-brown sheen and enhancing its crispness.
  • Chopped Walnuts or Pecans (Optional): (1/4 cup) – Adds a delightful crunch and nutty flavor that complements the brie and cranberry. Toasted nuts are even better for enhanced flavor.
  • Fresh Rosemary or Thyme (Optional): (1-2 sprigs) – For a touch of herbaceousness and visual appeal. Finely chopped fresh herbs can be sprinkled on top before baking or used as a garnish afterward.
  • Honey or Maple Syrup (Optional): (For drizzling) – A touch of sweetness to finish. Drizzling a little honey or maple syrup over the baked bites enhances the flavors and adds a lovely glaze.

Instructions

Follow these simple steps to create these irresistible Cranberry Brie Bites. The process is straightforward, making it perfect for even novice bakers.

  1. Preheat Your Oven & Prepare Baking Sheet: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper. This prevents sticking and makes cleanup a breeze. Parchment paper is truly your best friend in baking!
  2. Prepare the Puff Pastry: Gently unfold the thawed puff pastry sheet on a lightly floured surface. If your pastry is rectangular, you may want to lightly roll it out to even it out slightly and make it easier to cut into squares. Aim for a square or rectangle of about 12×12 inches.
  3. Cut the Puff Pastry: Using a sharp knife or pizza cutter, cut the puff pastry into 2-inch squares. You should get around 36 squares from a standard sheet of puff pastry. Try to make the squares as even as possible for uniform baking.
  4. Prepare the Brie: Cut the brie cheese into small cubes, roughly ½ inch in size. You want pieces that will fit comfortably within the puff pastry squares without being too bulky. If using a brie wedge, remove the rind if it’s thick or tough; otherwise, the rind is often edible and adds flavor.
  5. Assemble the Brie Bites: Place a puff pastry square in each cup of a mini muffin tin (or you can arrange them directly on the prepared baking sheet if you prefer a flatter bite). Gently press the pastry into the cup or flatten slightly on the baking sheet to create a small well.
  6. Add Brie and Cranberry Sauce: Place a cube of brie cheese into the center of each puff pastry square. Top with a small spoonful (about ½ teaspoon) of cranberry sauce. Be careful not to overfill, as this can cause the filling to spill out during baking.
  7. Optional Toppings: If using, sprinkle chopped walnuts or pecans over the cranberry sauce. You can also add a few finely chopped fresh rosemary or thyme leaves at this stage for an herbaceous touch.
  8. Egg Wash: In a small bowl, whisk together the egg with a tablespoon of water to create an egg wash. Brush the edges of each puff pastry square with the egg wash. This will give them a beautiful golden color and enhance browning.
  9. Bake: Bake in the preheated oven for 15-20 minutes, or until the puff pastry is golden brown and puffed up, and the brie is melted and gooey. Keep an eye on them as baking times can vary slightly depending on your oven.
  10. Cool Slightly & Serve: Once baked, remove the Cranberry Brie Bites from the oven and let them cool in the muffin tin or on the baking sheet for a few minutes before serving. This allows the brie to set slightly and makes them easier to handle.
  11. Optional Drizzle: If desired, drizzle a touch of honey or maple syrup over the warm brie bites just before serving for an extra touch of sweetness and glaze.
  12. Garnish & Serve Warm: Garnish with fresh rosemary or thyme sprigs, if desired, and serve warm. These are best enjoyed immediately while the pastry is flaky and the brie is melty.
