Fast Yogurt Mango Swirl

  • 2 large, ripe Mangoes (approx. 400-500g pulp): These are the star! Choose sweet, fragrant mangoes like Ataulfo (honey mango), Kent, or Keitt. They should yield slightly to gentle pressure. The riper and sweeter the mango, the less added sweetener you’ll need.
  • 2 cups (approx. 480g) Plain Greek Yogurt: Full-fat or low-fat Greek yogurt works beautifully, providing a creamy texture and a tangy counterpoint to the sweet mango. You can also use regular plain yogurt, but it will be less thick.
  • 24 tablespoons  Honey or Maple Syrup (optional): Adjust to your taste and the sweetness of your mangoes. Agave nectar is another good alternative. Start with less; you can always add more.
  • 1 teaspoon Vanilla Extract (optional): A small dash enhances the overall flavor profile, adding a warm, aromatic note that complements both the mango and yogurt.
  • Juice of 1/2 Lime (optional): This brightens the mango flavor and adds a subtle zesty kick, preventing the swirl from tasting flat.

Instructions

  1. Prepare the Mangoes: Wash the mangoes thoroughly. Peel them using a sharp knife or a vegetable peeler. Cut the mango flesh away from the large, flat pit. Dice the mango flesh into chunks.
  2. Blend the Mango Puree: Place the mango chunks into a blender or food processor. If using, add 1-2 tablespoons of your chosen sweetener (honey/maple syrup) and the lime juice directly to the mangoes. Blend until you have a smooth, vibrant puree. Scrape down the sides of the blender as needed to ensure everything is incorporated. Taste the puree; if it’s not sweet enough, add a little more sweetener and blend again. Set aside.
  3. Prepare the Yogurt Base: In a separate medium-sized bowl, combine the Greek yogurt, the remaining 1-2 tablespoons of sweetener (if using – taste your yogurt first!), and the vanilla extract (if using). Stir well until the yogurt is smooth and the sweetener and vanilla are evenly distributed.
  4. Assemble the Swirls: You have a couple of options for creating the swirl effect:
    • Layered Swirl: Take your serving glasses or small bowls. Add a spoonful of the mango puree to the bottom of each glass. Top with a spoonful of the sweetened yogurt. Continue alternating layers of mango puree and yogurt until the glasses are filled, finishing with a dollop of either yogurt or mango, or a bit of both.
    • Marbled Swirl: Add about two-thirds of the mango puree to the bowl of sweetened yogurt. Gently fold it in with a spatula, using only 3-4 strokes. You want to see distinct streaks of mango and yogurt, not a uniformly mixed orange color. Be careful not to overmix.
  5. Refine the Swirl (Optional): For the layered swirl, you can use a skewer or the handle of a thin spoon to gently drag through the layers from bottom to top along the inside of the glass a few times to create a more artistic swirl effect. For the marbled swirl, once spooned into glasses, you can add a small drizzle of the reserved mango puree on top and gently swirl with a toothpick.
  6. Chill (Recommended but Optional): For the best flavor and a more refreshing experience, cover the assembled swirls and chill in the refrigerator for at least 15-30 minutes before serving. This allows the flavors to meld. If you’re in a hurry, they can be enjoyed immediately.
  7. Garnish and Serve: Just before serving, garnish with a sprig of fresh mint, a few small diced mango pieces, a sprinkle of toasted coconut flakes, or a tiny dash of cardamom, if desired.
