Instructions

  1. Prepare the Lamb Chops: Begin by taking your lamb chops out of the refrigerator about 30 minutes before you plan to cook them. This allows them to come closer to room temperature, which promotes more even cooking. Pat the lamb chops dry with paper towels. This is a crucial step as it helps to achieve a beautiful sear and allows the herb crust to adhere better. Season both sides of the lamb chops generously with salt and freshly ground black pepper. Don’t be shy with the seasoning – it’s essential for flavorful lamb.
  2. Make the Herb Crust: In a medium-sized bowl, combine the finely chopped fresh rosemary, finely chopped fresh thyme, minced garlic, Dijon mustard, panko or regular breadcrumbs, lemon zest, and extra virgin olive oil. Mix all these ingredients together thoroughly until they are well combined and form a slightly damp, crumbly mixture.
