Ingredients

  • Carrots: 2 pounds, peeled and cut into uniform 1-inch thick rounds. The star of the show! Choose carrots that are firm and brightly colored for the best flavor and visual appeal. Uniform cuts ensure even cooking.
  • Maple Syrup: ¼ cup, preferably pure maple syrup. This natural sweetener is the heart of the glaze, providing a rich, warm sweetness and a beautiful glossy finish. Pure maple syrup offers the best depth of flavor and avoid pancake syrup, which is often corn syrup based.
  • Olive Oil: 2 tablespoons, extra virgin olive oil. Used for roasting, olive oil helps the carrots caramelize and adds a subtle fruity flavor. Extra virgin olive oil is preferred for its health benefits and flavor, but other neutral oils like avocado oil or grapeseed oil can also be used.
  • Dijon Mustard: 1 tablespoon. Adds a tangy depth that balances the sweetness of the maple syrup and enhances the savory notes of the carrots. Dijon mustard also helps to emulsify the glaze, ensuring it coats the carrots evenly.

  • Black Pepper: ¼ teaspoon, freshly ground, or to taste. Adds a subtle warmth and spice that complements the sweetness and savory notes. Freshly ground black pepper is preferred for its bolder flavor.
  • Fresh Parsley (optional): 2 tablespoons, chopped, for garnish. Adds a fresh, vibrant finish and a pop of color. Fresh parsley is best, but other fresh herbs like chives or dill can also be used for garnish.

Instructions

  1. Preheat Your Oven and Prepare a Baking Sheet: Begin by preheating your oven to 400°F (200°C). This high temperature is crucial for achieving perfectly roasted, caramelized carrots. While the oven is preheating, prepare a large baking sheet. Line it with parchment paper for easy cleanup, although this is optional. Using parchment paper prevents sticking and makes washing the baking sheet a breeze. If you don’t have parchment paper, lightly grease the baking sheet with olive oil or cooking spray to prevent sticking.
  2. Prepare the Carrots: Wash and peel your carrots thoroughly. Once peeled, trim off the ends. For even cooking, cut the carrots into uniform 1-inch thick rounds. Consistency in size is key to ensuring all the carrots cook at the same rate and achieve the same level of tenderness and caramelization. If some carrots are significantly thicker than others, they may take longer to cook and could be undercooked while thinner pieces are overcooked.
  3. Whisk Together the Glaze: In a medium-sized bowl, whisk together the maple syrup, olive oil, Dijon mustard, apple cider vinegar, garlic powder, dried thyme, salt, and black pepper. Whisk vigorously until all ingredients are well combined and the glaze is emulsified. This ensures that the glaze will coat the carrots evenly and create a harmonious flavor profile. The Dijon mustard and apple cider vinegar help to emulsify the oil and maple syrup, preventing them from separating during roasting.
