Follow these simple steps to create a dip that will have everyone asking for the recipe. The key is in the roasting, which brings out the natural sweetness of the cauliflower and garlic.
- Preheat and Prepare: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- Prepare Garlic for Roasting: Take the whole head of garlic, and using a sharp knife, slice off about 1/4 inch from the top to expose the individual cloves. Drizzle the exposed cloves with about 1 teaspoon of olive oil, then wrap the entire head loosely in aluminum foil.
- Prepare Cauliflower for Roasting: In a large bowl, toss the cauliflower florets with the 1/4 cup of olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Ensure the florets are evenly coated.
- Roast the Vegetables: Spread the seasoned cauliflower florets in a single layer on the prepared baking sheet. Place the foil-wrapped garlic head directly on the baking sheet alongside the cauliflower.
