Ingredients
  

For the Glaze
  • 1 cup brown sugar light or dark
  • 1 cup pineapple juice fresh or bottled
  • 1/4 cup honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon ground cloves just a pinch
For Basting and Garnish
  • 1 cup pineapple slices
  • 1/2 cup maraschino cherries

Method
 

For the Glaze
  1. In a medium saucepan, whisk together brown sugar, pineapple juice, honey, Dijon mustard, apple cider vinegar, and ground cloves until smooth.
  2. Bring mixture to a gentle boil over medium heat, then reduce heat and simmer for 5-7 minutes, stirring occasionally, until thickened.
To Glaze the Ham
  1. Preheat oven to 325°F (163°C). Score the ham in a diamond pattern, about 1/4-inch deep, then place on a rack in a roasting pan.
  2. Place ham uncovered in preheated oven. Bake for 1 hour, basting every 20 minutes with half of the glaze.
  3. Brush remaining glaze generously over ham's surface. Increase oven temp to 400°F (204°C) and bake 10-15 minutes more until caramelized.
  4. Remove ham, tent loosely with foil, and rest for 10-15 minutes before slicing.
