Cooking Steps
  1. Sauté Aromatics: In a large pot over medium heat, heat oil, cook onion, garlic, and ginger until translucent, about 5 minutes.
  2. Toast Spices: Add ground cumin, turmeric, coriander, and a pinch of red chili flakes to the pot; stir constantly for 1 minute.
  3. Add Lentils & Liquids: Stir in red lentils, coconut milk, and vegetable broth; raise heat to medium-high until it bubbles.
  4. Simmer Stew: Reduce heat to low; cover and simmer for 20 minutes until lentils are tender and it thickens.
  5. Add Vegetables: Stir in diced carrots and chopped tomatoes; cook uncovered for 10 minutes until carrots are just tender.
  6. Finish with Greens: Stir in spinach or kale; cover briefly and simmer for 2 minutes until greens wilt.
  7. Season & Serve: Stir in lime juice, adjust salt and pepper, ladle into bowls, and garnish with cilantro.
