Preparation
- Preheat oven to 325°F and line a baking sheet with parchment paper.
- In a large bowl, toss old-fashioned oats, mixed nuts, shredded coconut, and ground cinnamon until well combined.
- Warm honey (or maple syrup), coconut oil, and vanilla extract in a small saucepan over low heat until just melted.
- Pour the warm sweetener mixture over the dry mix, stirring gently to ensure every oat and nut is lightly coated.
- Spread the mixture in an even layer on the sheet; bake for 20 minutes, stirring halfway.
- Remove from oven and let the granola cool on the pan for at least 30 minutes.
- Once cooled, fold in dried fruit, chia or flax seeds, and chocolate chips.
- Optional: Sprinkle a pinch of flaky sea salt over the cooled granola.
