  • 2 cups Mixed nuts (almonds, walnuts, pecans) lightly toasted
  • 1 cup Unsweetened shredded coconut adds crispness
  • 1 teaspoon Ground cinnamon enhances sweetness
Sweetener and Binder
  • 1/2 cup Honey or maple syrup as sweetener
  • 1/2 cup Coconut oil helps crisp up during baking
  • 1 teaspoon Vanilla extract lifts all flavors

  • 1 cup Dried fruit (raisins, cranberries, chopped apricots) added after baking

Method
 

Preparation
  1. Preheat oven to 325°F and line a baking sheet with parchment paper.
  2. In a large bowl, toss old-fashioned oats, mixed nuts, shredded coconut, and ground cinnamon until well combined.
  3. Warm honey (or maple syrup), coconut oil, and vanilla extract in a small saucepan over low heat until just melted.
  4. Pour the warm sweetener mixture over the dry mix, stirring gently to ensure every oat and nut is lightly coated.
  5. Spread the mixture in an even layer on the sheet; bake for 20 minutes, stirring halfway.
  6. Remove from oven and let the granola cool on the pan for at least 30 minutes.
  7. Once cooled, fold in dried fruit, chia or flax seeds, and chocolate chips.
  8. Optional: Sprinkle a pinch of flaky sea salt over the cooled granola.
