Method
 

Preparation
  1. Preheat oven to 400°F, lining a baking sheet with parchment.
  2. Prep potatoes by scrubbing and drying medium russets. Prick each tuber with a fork.
  3. Bake whole potatoes directly on the rack for 45–50 minutes until tender.
  4. Cool and halve potatoes for 10 minutes, then slice lengthwise and scoop out flesh.
Herb Seasoning
  1. Whisk rosemary, thyme, parsley, olive oil, salt, and pepper in a bowl.
  2. Brush the herb mixture evenly onto potato shells.
  3. Roast again on the lined tray at 400°F for 10–15 minutes until golden.
