Preparation
- Preheat oven to 375°F (190°C) and position rack in the center.
- Prepare crust: Roll chilled dough into a 12-inch circle and transfer to a 9-inch quiche pan.
- Blind bake: Line crust with parchment paper and baking beans or rice, bake for 15 minutes.
- Whisk filling: Combine eggs, heavy cream, salt, pepper, and nutmeg until smooth.
- Add ham and cheese: Sprinkle diced ham and top with shredded cheese evenly.
- Pour custard: Gently pour egg mixture over ham and cheese until just below the rim.
- Bake quiche: Reduce oven to 350°F (175°C) and bake for 35–40 minutes.
- Cool and serve: Let rest on a wire rack for 10 minutes before slicing.
