For the Toast Base
  • 2 slices Sourdough or whole grain bread choose your favorite sturdy bread
  • 1 tablespoon Olive oil light brush before toasting
For the Avocado Layer
  • 1 medium Ripe avocado creamy and smooth
  • 1 tablespoon Lemon or lime juice to prevent browning
  • to taste Salt
  • to taste Pepper
For the Tomato Topping
  • 1 cup Cherry or grape tomatoes juicy bursts of sweetness
  • to taste Fresh basil or cilantro for fragrance
  • to taste Red pepper flakes or smoked paprika optional for kick

Method
 

For the Toast Base
  1. Preheat toaster oven to 400°F. Lightly brush each bread slice with olive oil.
  2. Arrange the oiled bread slices on a baking tray. Bake for 5–7 minutes until golden brown.
For the Avocado Layer
  1. In a bowl, mash ripe avocado with lemon juice, salt, and pepper.
  2. Spread the avocado mixture over each warm toast slice.
For the Tomato Topping
  1. Halve cherry tomatoes and mix with basil and optional spices.
  2. Spoon the tomato mixture over the avocado layer.
