  • 2 cups Bell peppers Mix of colors
  • 1 cup Carrots Shredded or thinly sliced
  • 2 cups Broccoli florets
  • 3 cloves Garlic Minced
  • 1 medium Onion Diced
For the Noodles and Sauce
  • 8 ounces Egg noodles Or rice noodles
  • 1/4 cup Soy sauce
  • 2 tablespoons Sesame oil
  • 1 cup Beef broth
Optional Garnishes and Extras
  • 2 tablespoons Green onions Thinly sliced
  • 1 teaspoon Red pepper flakes Optional
  • 1 tablespoon Sesame seeds Toasted

Instructions
  1. Brown the Beef: Heat a tablespoon of oil in a skillet over medium-high heat; add ground beef and cook 5 minutes, breaking it up until no pink remains and edges turn golden.
  2. Sauté Aromatics: Add minced garlic and diced onion; stir for 1–2 minutes until fragrant and translucent.
  3. Stir in Veggies: Toss in bell peppers, carrots, and broccoli florets; cook 3–4 minutes until veggies are bright and tender-crisp.
  4. Add Broth & Sauce: Pour in beef broth, soy sauce, and sesame oil; bring to a gentle simmer for 2 minutes.
  5. Cook Noodles: Gently fold in egg noodles; cover and cook 4–5 minutes until noodles absorb the sauce and are tender.
  6. Season to Taste: Taste and adjust with extra soy sauce, red pepper flakes, or sesame oil.
  7. Plate & Serve: Transfer noodles to bowls; garnish with sliced green onions and toasted sesame seeds.
