Ingredients
  

For the Wrap Filling
  • 2 large Eggs Lightly beaten
  • 1 cup Shredded Cheese Use cheddar or mozzarella
  • 1 cup Bell Peppers Diced small
  • 1 cup Spinach Fresh leaves
  • 1/2 cup Onion Finely chopped
  • 1 tbsp Olive Oil For sautéing
For the Wrap Assembly
  • 2 large Flour Tortillas Soft and flexible
  • to taste Salt and Pepper Season to taste
  • to taste Optional Hot Sauce Add for spice

Method
 

For the Filling
  1. Warm 1 tbsp olive oil in a medium skillet over medium heat until shimmering, about 1 minute.
  2. Add diced peppers and onions, cooking until soft and translucent, about 3–4 minutes. Stir spinach in last 30 seconds.
  3. In a bowl, lightly beat eggs with salt and pepper until blended and slightly frothy.
  4. Pour eggs over sautéed veggies in the skillet, stirring gently until set but moist, about 2–3 minutes.
For Assembly
  1. Lay a tortilla flat, spread the egg-veggie mixture evenly across the center, then sprinkle shredded cheese on top.
  2. Heat skillet over medium, place wrap seam-side down, cooking 1–2 minutes per side until golden brown and cheese melts.
  3. Transfer wrap to a plate, slice in half, and serve immediately.
