For the Skillet Base
- Heat a large skillet over medium-high, add seasoned ground beef, and cook until no longer pink and lightly browned, about 5 minutes.
- Add chopped onion and minced garlic, stirring until softened and fragrant, about 2–3 minutes.
- Stir in long-grain white rice and diced tomatoes with juices, cooking 2 minutes until rice is lightly toasted.
- Sprinkle taco seasoning, pour in chicken broth, stir well, and bring to a gentle simmer over medium heat.
- Cover, reduce heat to low, and let rice cook undisturbed until tender and liquid is absorbed, 18–20 minutes.
For the Cheesy Finish
- Uncover, sprinkle shredded cheddar evenly, cover again, and let cheese melt into a gooey layer, about 2–3 minutes.
- Gently fluff rice with a fork, garnish with fresh cilantro if desired, and serve hot straight from the skillet.
