For the Seasoning

For the Cheesy Finish
  • 1 cup Shredded cheddar cheese Melts into a creamy layer.

Method
 

For the Skillet Base
  1. Heat a large skillet over medium-high, add seasoned ground beef, and cook until no longer pink and lightly browned, about 5 minutes.
  2. Add chopped onion and minced garlic, stirring until softened and fragrant, about 2–3 minutes.
  3. Stir in long-grain white rice and diced tomatoes with juices, cooking 2 minutes until rice is lightly toasted.
  4. Sprinkle taco seasoning, pour in chicken broth, stir well, and bring to a gentle simmer over medium heat.
  5. Cover, reduce heat to low, and let rice cook undisturbed until tender and liquid is absorbed, 18–20 minutes.
For the Cheesy Finish
  1. Uncover, sprinkle shredded cheddar evenly, cover again, and let cheese melt into a gooey layer, about 2–3 minutes.
  2. Gently fluff rice with a fork, garnish with fresh cilantro if desired, and serve hot straight from the skillet.
