How to Make Cheesy Veggie Breakfast Wrap
  1. Warm 1 tbsp olive oil in a nonstick skillet over medium heat for 1 minute.
  2. Add bell peppers and sliced onion, cooking for about 5 minutes until softened and lightly golden.
  3. Toss in a handful of spinach, stirring until wilted, then stir in halved cherry tomatoes for 1–2 minutes.
  4. Lay each tortilla flat, sprinkle a handful each of cheddar and mozzarella across the center.
  5. Spoon the veggie mixture evenly over the cheese, then fold sides in and roll tightly.
  6. Brush pan with a touch of oil, place wraps seam-side down, cook 2 minutes per side until golden brown.
