  • 4 pieces Chicken thighs or breasts Bone-in preferred for juiciness
  • 4 cloves Garlic Minced
  • 1/4 cup Olive oil
  • 2 tablespoons Lemon juice Freshly squeezed
  • 2 tablespoons Fresh rosemary Chopped
  • 1 tablespoon Fresh thyme Chopped
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper Freshly ground
For Roasting & Serving
  • 2 cups Baby potatoes or vegetables Roast alongside chicken
  • 2 tablespoons Butter Dot over chicken before roasting
  • 1/4 cup Parsley Chopped, for garnish

Method
 

Directions
  1. Preheat oven to 425°F.
  2. In a bowl, whisk together minced garlic, olive oil, fresh lemon juice, rosemary, thyme, salt, and pepper until well combined.
  3. Place chicken pieces in a large bowl or zip-top bag, pour in the marinade, toss to coat, and chill for at least 30 minutes.
  4. Arrange marinated chicken and baby potatoes on a baking sheet, dot with butter, and roast for 35-40 minutes.
  5. Let the chicken rest for 5 minutes before garnishing with fresh parsley, then slice and serve warm.
