For the Beef and Mushrooms
- Pat beef strips dry, then season with salt and pepper.
- In a hot skillet over medium-high heat, add oil and beef strips. Cook for 2-3 minutes per side until golden brown.
- To the same pan, add onions and mushrooms. Cook for 5 minutes until onions are translucent and mushrooms are lightly golden.
For the Sauce
- Pour in beef broth and Dijon mustard, scraping the fond from the pan. Stir for about one minute until fragrant.
- Reduce heat to low and let the sauce bubble gently for 3-4 minutes, thickening slightly.
- Off heat, whisk in sour cream and paprika until silky smooth. Return to low heat just until warmed through.
- Add seared beef back to the pan, tossing in the creamy sauce for 1-2 minutes.
