For the Sauce
  • 1 cup sour cream For a creamy twist.
  • 1 cup beef broth Adds rich flavor.
  • 1 tablespoon Dijon mustard A little tang.
  • 1 teaspoon paprika Offers a warm, smoky note.
For Serving
  • 4 servings egg noodles or rice Classic comforting bases.

Method
 

For the Beef and Mushrooms
  1. Pat beef strips dry, then season with salt and pepper.
  2. In a hot skillet over medium-high heat, add oil and beef strips. Cook for 2-3 minutes per side until golden brown.
  3. To the same pan, add onions and mushrooms. Cook for 5 minutes until onions are translucent and mushrooms are lightly golden.
For the Sauce
  1. Pour in beef broth and Dijon mustard, scraping the fond from the pan. Stir for about one minute until fragrant.
  2. Reduce heat to low and let the sauce bubble gently for 3-4 minutes, thickening slightly.
  3. Off heat, whisk in sour cream and paprika until silky smooth. Return to low heat just until warmed through.
  4. Add seared beef back to the pan, tossing in the creamy sauce for 1-2 minutes.
