For the Alfredo Sauce

Method
 

Cooking Instructions
  1. Pat chicken dry and rub evenly with salt and pepper. Let sit while you heat the pan, about 5 minutes.
  2. Preheat pan over medium-high heat, add oil, and sear chicken for 3–4 minutes per side until golden brown.
  3. Transfer chicken to a plate and cover loosely with foil. Let rest for 5 minutes.
  4. Bring a large pot of salted water to a rolling boil. Add fettuccine and cook until al dente, about 10 minutes.
  5. Before draining, scoop out ½ cup of pasta water.
  6. In the same pan, melt butter over medium heat until foam subsides.
  7. Add minced garlic and cook for 30 seconds until fragrant.
  8. Stir in heavy cream and reduce heat to medium-low, simmer for 3–4 minutes.
  9. Remove from heat and whisk in grated Parmesan until melted and smooth.
  10. Slice chicken, add pasta and reserved water, toss until well coated and serve.
