Preparation
- Preheat your oven to 325°F, placing the rack in the center.
- Remove giblets from the cavity, rinse the turkey inside and out under cold water, then pat completely dry with paper towels.
Herb Butter
- Mix softened butter, chopped rosemary, thyme, and sage with minced garlic, salt, and pepper in a bowl until smooth.
- Apply this herby butter generously under the skin and all over the exterior.
Roasting
- Arrange quartered onions, chopped carrots, and celery in the bottom of a large roasting pan; drizzle with olive oil and a pinch of salt.
- Place turkey breast-side up on a rack above veggies.
- Roast uncovered at 325°F for 13–15 minutes per pound, basting occasionally.
- The turkey is done when a thermometer in the thigh reads 165°F.
- Rest the turkey on a carving board and tent loosely with foil for at least 20 minutes.
- Carve by slicing breast meat and separating dark meat; cut against the grain for tenderness.
