  • 1 whole Turkey (10-12 lbs) Choose a fresh or fully thawed bird for even cooking.
  • 0.5 cup Unsalted Butter Softened.
  • 3 sprigs Fresh Rosemary Adds a piney aroma.
  • 3 sprigs Fresh Thyme Enhances flavor.
  • 4-5 leaves Fresh Sage Offers an earthy note.
  • 4-5 cloves Garlic Minced.
  • 2 tbsp Salt Kosher is best.
  • 1 tbsp Black Pepper Freshly ground.
For the Roasting Pan
  • 1 large Onion Quartered.
  • 2 whole Carrots Chopped.
  • 2 stalks Celery Chopped.

Method
 

Preparation
  1. Preheat your oven to 325°F, placing the rack in the center.
  2. Remove giblets from the cavity, rinse the turkey inside and out under cold water, then pat completely dry with paper towels.
Herb Butter
  1. Mix softened butter, chopped rosemary, thyme, and sage with minced garlic, salt, and pepper in a bowl until smooth.
  2. Apply this herby butter generously under the skin and all over the exterior.
Roasting
  1. Arrange quartered onions, chopped carrots, and celery in the bottom of a large roasting pan; drizzle with olive oil and a pinch of salt.
  2. Place turkey breast-side up on a rack above veggies.
  3. Roast uncovered at 325°F for 13–15 minutes per pound, basting occasionally.
  4. The turkey is done when a thermometer in the thigh reads 165°F.
  5. Rest the turkey on a carving board and tent loosely with foil for at least 20 minutes.
  6. Carve by slicing breast meat and separating dark meat; cut against the grain for tenderness.
