For the Marinade
- In a bowl, whisk honey, soy sauce, minced garlic, olive oil, and apple cider vinegar until smooth and golden.
- Pat chicken dry, then add thighs to a dish. Pour marinade over, coating each piece thoroughly. Refrigerate for at least 30 minutes or up to overnight.
For the Bake
- Preheat oven to 400°F (200°C) and lightly spray a baking dish with oil. Arrange the marinated chicken, skin-side up, in a single layer.
- Bake for 25–30 minutes, basting halfway with leftover marinade, until chicken is cooked through and the glaze is caramelized.
- Sprinkle chopped parsley or green onions over chicken before serving.
