Making the Hummus
- Blend chickpeas, tahini, garlic, lemon juice, cumin and a splash of olive oil in a food processor until silky smooth and creamy.
- Season by tasting hummus, then slowly adding salt and a drizzle of olive oil until flavors pop and texture feels luxuriously smooth.
- Chill hummus in a covered bowl for at least 30 minutes.
Assembling the Veggie Board
- Slice cucumbers into rounds, cut bell peppers into strips, trim carrot and celery sticks, and halve cherry tomatoes.
- Arrange hummus in the center of a large board, then surround it with vibrant veggies, pita wedges, olives, and pickles.
- Serve immediately at room temperature.
