Ingredients
  

For the Hummus
  • 1 can cooked chickpeas
  • 3 tbsp tahini adjust to taste
  • 2 cloves garlic fresh or roasted
  • 2 tbsp lemon juice freshly squeezed
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp salt adjust to taste
For the Fresh Veggies
  • 1 medium cucumber sliced
  • 1 cup bell peppers mixed colors
  • 2 medium carrots sliced into sticks
  • 1 cup cherry tomatoes halved
  • 2 stalks celery cut into sticks
Optional Extras
  • 1 cup pita bread or crackers
  • 1 cup olives
  • 1 cup pickles
  • fresh herbs (parsley, mint) for garnish

Method
 

Making the Hummus
  1. Blend chickpeas, tahini, garlic, lemon juice, cumin and a splash of olive oil in a food processor until silky smooth and creamy.
  2. Season by tasting hummus, then slowly adding salt and a drizzle of olive oil until flavors pop and texture feels luxuriously smooth.
  3. Chill hummus in a covered bowl for at least 30 minutes.
Assembling the Veggie Board
  1. Slice cucumbers into rounds, cut bell peppers into strips, trim carrot and celery sticks, and halve cherry tomatoes.
  2. Arrange hummus in the center of a large board, then surround it with vibrant veggies, pita wedges, olives, and pickles.
  3. Serve immediately at room temperature.
