- In a medium bowl, whisk together lemon juice, olive oil, minced garlic, chopped parsley, thyme, salt, and pepper until smooth and aromatic.
- Place fillets in a shallow dish, pour marinade evenly over, cover, and refrigerate 15–30 minutes until flavors meld and fish looks glossy.
- Heat grill to medium-high (around 400°F), preheating for about 10 minutes so it reaches an even temperature. Brush grates with oil to prevent sticking and ensure classic sear marks.
