Method
 

For the Mango Layer
  1. Blend fresh mango cubes and a splash of water in a blender until smooth.
  2. Whisk agar agar powder, sugar, and water in a saucepan over medium heat until it simmers.
  3. Remove from heat, stir in mango puree, pour into dessert cups, cool, then chill for 15 minutes.
For the Coconut Layer
  1. In another saucepan, whisk coconut milk, agar agar, sugar, and a pinch of salt, simming until dissolved.
  2. Let cool slightly, pour over mango layer, and refrigerate for 30 minutes.
  3. Top with fresh mango cubes and toasted coconut flakes, serve chilled.
