For the Coconut Jelly Base
- Sprinkle gelatin powder over 1/4 cup cold water and let sit 5 minutes until spongy, translucent, and lump-free.
- In a small saucepan, heat coconut milk and sugar over medium, stirring until sugar dissolves and just simmering.
- Whisk bloomed gelatin into warm coconut milk until smooth, then strain mixture through a fine mesh sieve for extra silkiness.
- Pour coconut mixture into 6 cups, then refrigerate 30–45 minutes until fully set.
For the Mango Jelly Layer
- Sprinkle gelatin over 2 tbsp cold water, let stand 5 minutes until fully dissolved.
- Gently warm mango puree, sugar, and lime juice in a saucepan over low heat until steaming.
- Stir bloomed gelatin into warm mango mixture until silky smooth.
- Slowly pour mango jelly over set coconut base and refrigerate another 30 minutes until firm.
To Garnish and Serve
- Add fresh mango cubes, sprinkle toasted coconut flakes, and finish with a mint leaf for presentation.
