  • 1 cup fresh mozzarella balls Bocconcini or Ciliegine
  • 2 tablespoons extra virgin olive oil drizzle lightly
  • 2 tablespoons balsamic glaze for drizzling
For Assembly
  • 12 pieces mini phyllo cups or endive leaves
  • to taste salt for seasoning
  • to taste freshly ground black pepper for seasoning

Method
 

For the Salad Filling
  1. Quarter cherry tomatoes until vibrant juices spill and each piece is bite-sized.
  2. Gently tear bright basil leaves into small ribbons.
  3. Combine chopped tomatoes, torn basil, and creamy mozzarella balls in a medium bowl.
  4. Drizzle extra virgin olive oil, season with salt and freshly ground pepper, then toss to combine.
For Assembly
  1. Fill each mini phyllo cup or endive leaf with the salad mixture.
  2. Drizzle balsamic glaze over each cup in thin zigzag lines.
  3. Top with a tiny basil sliver or microgreen for garnish.
