How to Make Mini Cheesy Beef Nacho Cups
- Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin.
- In a medium skillet over medium heat, cook onion in oil until translucent, about 3 minutes.
- Stir in minced garlic and cook for 1 minute, until fragrant.
- Add ground beef, breaking it up, and cook until no pink remains, about 5-7 minutes.
- Sprinkle chili powder, cumin, salt, and pepper over beef and cook for another minute.
- Press one tortilla chip into each muffin cup to form a cup.
- Spoon the seasoned beef mixture into each chip cup.
- Sprinkle shredded cheddar cheese over each beef cup.
- Bake for 8-10 minutes until cheese is melted and edges are golden.
- Let cool in the tin for 2 minutes before serving.
