Method
 

For the Filling
  1. Wilt spinach in a hot skillet over medium heat until bright green and tender, about 2 minutes.
  2. Transfer wilted spinach to a fine-mesh sieve and press out excess moisture, then chop finely.
  3. Add cream cheese, grated Parmesan, minced garlic, salt, and pepper to the spinach, then stir until smooth.
For the Puff Pastry
  1. Preheat oven to 400°F (205°C) and line a baking sheet with parchment paper.
  2. Roll out thawed puff pastry on a lightly floured surface and cut into 12 equal squares.
  3. Spoon a heaping teaspoon of filling onto each square’s center, fold corners, and press edges to seal.
  4. Brush each puff’s surface with the beaten egg wash.
  5. Bake for 15–18 minutes until puffed and golden brown, then cool slightly before serving.
