Method
 

For the Zucchini Fries
  1. Preheat the oven to 425°F and line a baking sheet with parchment or oil spray.
  2. Trim zucchini ends and cut each into uniform 3-inch sticks, about 1/2-inch thick.
  3. Dust each zucchini stick in all-purpose flour until lightly coated, shaking off excess.
  4. Dip each floured zucchini stick into lightly beaten eggs, ensuring even coating.
  5. Combine panko breadcrumbs, freshly grated Parmesan, garlic powder, salt, and pepper; press each egg-coated zucchini into the mixture.
  6. Arrange fries in a single layer on the prepared sheet and bake for 20–25 minutes, flipping halfway.
  7. Let fries cool for 2–3 minutes on the sheet before serving.
