Ingredients
  

For the Chicken and Marinade
  • 1 lb boneless chicken thighs juicy and tender texture
  • 1/2 cup sweet chili sauce the star ingredient
  • 1/4 cup soy sauce adds savory depth
  • 2 tbsp honey enhances sweetness
  • 3 cloves garlic cloves minced
  • 2 tbsp lime juice fresh acidity
  • 1 inch fresh ginger grated for warmth
For Skewering and Serving
  • 4 pieces wooden or metal skewers soaked if wooden
  • 1/4 cup fresh cilantro or green onions chopped for garnish
  • 2 tbsp sesame seeds toasted for garnish

Method
 

For the Marinade
  1. In a medium bowl, whisk together sweet chili sauce, soy sauce, honey, minced garlic, lime juice, and grated ginger until creamy and vibrant.
  2. Add bite-sized chicken pieces, toss gently to coat, cover with plastic wrap, and refrigerate for at least 30 minutes.
For Skewers & Grill
  1. Place wooden skewers in a shallow dish of water and soak for at least 20 minutes.
  2. Thread each chicken piece onto skewers, leaving gaps for heat circulation.
  3. Preheat your grill to medium-high heat (about 400°F) and clean the grate.
  4. Place skewers on the grill and cook for 4–5 minutes per side until internal temperature reaches 165°F.
  5. During the last minute of grilling, brush skewers with reserved marinade.
  6. Remove skewers from heat and let rest for 3–5 minutes before serving. Sprinkle with cilantro and sesame seeds.
