For the Marinade
- In a medium bowl, whisk together sweet chili sauce, soy sauce, honey, minced garlic, lime juice, and grated ginger until creamy and vibrant.
- Add bite-sized chicken pieces, toss gently to coat, cover with plastic wrap, and refrigerate for at least 30 minutes.
For Skewers & Grill
- Place wooden skewers in a shallow dish of water and soak for at least 20 minutes.
- Thread each chicken piece onto skewers, leaving gaps for heat circulation.
- Preheat your grill to medium-high heat (about 400°F) and clean the grate.
- Place skewers on the grill and cook for 4–5 minutes per side until internal temperature reaches 165°F.
- During the last minute of grilling, brush skewers with reserved marinade.
- Remove skewers from heat and let rest for 3–5 minutes before serving. Sprinkle with cilantro and sesame seeds.
