Ingredients
  

Spinach Artichoke Filling
  • 2 cups Fresh spinach well-drained
  • 1 cup Artichoke hearts chopped finely
  • 8 oz Cream cheese softened
  • 1/4 cup Mayonnaise
  • 1/4 cup Sour cream
  • 1/2 cup Grated Parmesan cheese
  • 1 cup Mozzarella cheese shredded
  • 1 tsp Garlic powder
  • to taste Salt
  • to taste Pepper
Cups
  • 12 units Mini phyllo shells or wonton wrappers
  • 2 tbsp Olive oil or melted butter for brushing

Method
 

Preparation
  1. Preheat oven to 375°F and brush mini phyllo shells with olive oil or melted butter.
  2. Beat softened cream cheese, mayonnaise and sour cream until smooth and creamy.
  3. Fold in well-drained spinach, chopped artichoke hearts, garlic powder, salt and pepper until combined.
  4. Spoon filling into each prepared phyllo shell, smoothing the top.
  5. Sprinkle shredded mozzarella and grated Parmesan over each filled cup.
  6. Arrange cups on a baking sheet and bake for 12–15 minutes until edges are golden brown.
  7. Let the cups cool on the pan for 5 minutes before serving warm or at room temperature.
