How to Make Sweet Chili Chicken Bites
- Trim and cube boneless chicken breast into bite-sized pieces, then season well with salt and pepper. Dredge in cornstarch until each piece is evenly coated for crispiness.
- Warm vegetable oil in a large skillet over medium-high heat until shimmering, about 2 minutes.
- Working in batches, fry the coated chicken bites for 4–5 minutes per side, or until deep golden and cooked through. Drain on a paper towel–lined plate.
- In a small saucepan, whisk together sweet chili sauce, honey, soy sauce, minced garlic, and rice vinegar until smooth and glossy.
- Bring the mixture to a gentle simmer over medium heat, stirring for about 3–4 minutes until it thickens slightly and coats the spoon.
- Transfer hot chicken bites to a large bowl, pour the warm sauce over, and toss gently until every piece is evenly glazed.
- Sprinkle chopped green onions and sesame seeds on top, then arrange on a platter. Serve immediately while the bites are hot and sticky.
