Preparation
  1. In a bowl, whisk lemon juice, soy sauce, minced garlic, fresh ginger, honey, and cornstarch until smooth.
  2. Toss chicken pieces in the marinade and let rest for 10 minutes.
  3. Warm sesame oil in a skillet over medium-high heat.
  4. Add chicken to the pan in a single layer; stir-fry for 5–7 minutes until cooked.
  5. Toss in bell peppers, snap peas, and carrots; stir-fry for 3–4 minutes until crisp-tender.
  6. Pour reserved marinade into the skillet, bring to a boil, then simmer for 2 mins.
  7. Garnish with sliced green onions and red pepper flakes; serve hot.
