- In a bowl, whisk lemon juice, soy sauce, minced garlic, fresh ginger, honey, and cornstarch until smooth.
- Toss chicken pieces in the marinade and let rest for 10 minutes.
- Warm sesame oil in a skillet over medium-high heat.
- Add chicken to the pan in a single layer; stir-fry for 5–7 minutes until cooked.
- Toss in bell peppers, snap peas, and carrots; stir-fry for 3–4 minutes until crisp-tender.
- Pour reserved marinade into the skillet, bring to a boil, then simmer for 2 mins.
- Garnish with sliced green onions and red pepper flakes; serve hot.
