How to Make Cheesy Baked Zucchini Fries
  1. Preheat your oven to 425°F (218°C) and line a baking sheet with parchment paper or a silicone mat.
  2. Trim ends off two medium zucchinis and cut them into uniform sticks roughly ¼-inch thick.
  3. In a shallow bowl, mix all-purpose flour with garlic powder, salt and pepper. Toss zucchini sticks until lightly coated.
  4. Beat eggs in a second bowl then dip each floured zucchini stick, turning to coat evenly.
  5. Combine panko breadcrumbs and grated Parmesan cheese in a third bowl. Press each egg-washed stick into the breadcrumb mix.
  6. Spread the coated zucchini fries evenly on the prepared sheet.
  7. Transfer to the oven and bake at 425°F for about 20–25 minutes, flipping halfway through.
  8. Let fries rest 2 minutes, then transfer to a serving platter. Serve with marinara sauce or ranch dressing.
