How to Make Cheesy Baked Zucchini Fries
- Preheat your oven to 425°F (218°C) and line a baking sheet with parchment paper or a silicone mat.
- Trim ends off two medium zucchinis and cut them into uniform sticks roughly ¼-inch thick.
- In a shallow bowl, mix all-purpose flour with garlic powder, salt and pepper. Toss zucchini sticks until lightly coated.
- Beat eggs in a second bowl then dip each floured zucchini stick, turning to coat evenly.
- Combine panko breadcrumbs and grated Parmesan cheese in a third bowl. Press each egg-washed stick into the breadcrumb mix.
- Spread the coated zucchini fries evenly on the prepared sheet.
- Transfer to the oven and bake at 425°F for about 20–25 minutes, flipping halfway through.
- Let fries rest 2 minutes, then transfer to a serving platter. Serve with marinara sauce or ranch dressing.
