Method
 

Making the Tartlets
  1. Preheat oven to 350°F (175°C) and position the rack in the center.
  2. In a medium bowl, whisk together flour, sugar, and salt until light and uniform.
  3. Add chilled, diced butter to the dry mix and blend until coarse crumbs form.
  4. Drizzle cold water and gently mix until the dough just comes together.
  5. Divide dough among the mini tart pan, pressing firmly into each cavity.
  6. Prick crusts, line with parchment, and fill with baking beans. Bake for 12-15 minutes.
  7. In a bowl, whisk together fresh lemon juice, zest, sugar, eggs, and cream until smooth.
  8. Spoon lemon filling into each warm crust, filling nearly to the top.
  9. Bake at 325°F (162°C) for 15-18 minutes until filling is just set.
  10. Cool in pan for 5 minutes, then transfer to wire rack. Chill for at least 1 hour.
