Making the Tartlets
- Preheat oven to 350°F (175°C) and position the rack in the center.
- In a medium bowl, whisk together flour, sugar, and salt until light and uniform.
- Add chilled, diced butter to the dry mix and blend until coarse crumbs form.
- Drizzle cold water and gently mix until the dough just comes together.
- Divide dough among the mini tart pan, pressing firmly into each cavity.
- Prick crusts, line with parchment, and fill with baking beans. Bake for 12-15 minutes.
- In a bowl, whisk together fresh lemon juice, zest, sugar, eggs, and cream until smooth.
- Spoon lemon filling into each warm crust, filling nearly to the top.
- Bake at 325°F (162°C) for 15-18 minutes until filling is just set.
- Cool in pan for 5 minutes, then transfer to wire rack. Chill for at least 1 hour.
