How to Make Herb Butter Roast Chicken Dinner
  1. In a medium bowl, whisk softened butter with minced garlic, finely chopped rosemary and thyme, plus salt and pepper, until smooth and aromatic.
  2. Pat the chicken dry, season the cavity with salt and pepper, stuff with lemon halves, and truss legs with kitchen twine.
  3. Gently lift the skin over the breasts, spread herb butter underneath and all over the skin, then drizzle olive oil for extra crispiness.
  4. Place chicken breast-side up on a rack in a roasting pan, then bake at 425°F for about 1 hour 15 minutes until skin is golden.
  5. Transfer to a board, tent with foil, and rest for 15 minutes before carving.
