How to Make Herb Butter Roast Chicken Dinner
- In a medium bowl, whisk softened butter with minced garlic, finely chopped rosemary and thyme, plus salt and pepper, until smooth and aromatic.
- Pat the chicken dry, season the cavity with salt and pepper, stuff with lemon halves, and truss legs with kitchen twine.
- Gently lift the skin over the breasts, spread herb butter underneath and all over the skin, then drizzle olive oil for extra crispiness.
- Place chicken breast-side up on a rack in a roasting pan, then bake at 425°F for about 1 hour 15 minutes until skin is golden.
- Transfer to a board, tent with foil, and rest for 15 minutes before carving.
