How to Make Brown Sugar Roasted Sweet Potatoes
- Preheat oven to 400°F. Peel and dice sweet potatoes into 1-inch cubes.
- In a bowl, toss sweet potato cubes with olive oil, brown sugar, ground cinnamon, salt, and pepper.
- Spread seasoned potatoes in a single layer on a parchment-lined baking sheet. Roast for 25 minutes.
- Flip cubes halfway through roasting (about 12–15 minutes) for even caramelization.
- Transfer roasted sweet potatoes to a platter, gently tossing in pan juices. Garnish with pecans and thyme.
- Optional: Drizzle lightly with maple syrup for extra sweetness.
