  • 1 cup Red onion Wedges

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F for 10 minutes.

  3. Toss baby potatoes, sliced carrots, and red onion wedges with olive oil, salt, and pepper.
  4. Place seasoned chicken pieces skin-side up on a baking sheet, nestling vegetables around.
  5. Roast for 35–40 minutes until chicken is golden brown and reaches 165°F internally.
  6. Let the chicken rest for 5 minutes outside the oven.
  7. Sprinkle chopped fresh parsley over the chicken and vegetables. Serve immediately.
